Now Trending: Crazy-Creative Mayonnaise Flavors

Alert! Crazy mayos are sweeping the nation. Everyone from small artisanal operations to the daddy of all mayos, Hellmann’s, has gotten in the game, disrupting the basic emulsification of eggs and oil with wacky flavorings. No longer do you have to wonder how to spice up a turkey sandwich on whole wheat.

Get on the bandwagon by mixing a flavoring into your favorite mayo, or try one of the many new mayos on the market.

DIY Crazy Mayos

Whether you’re whipping up homemade mayonnaise or taking a shortcut with store-bought, you can invent your own flavor-enhanced versions by stirring or blending in any of these items:

Balsamic vinegar

Sriracha

Ketchup (OK, not crazy, but this “special sauce” is a must for burgers)

Roasted garlic (roast a head of garlic until garlic is soft and fragrant, then puree in a blender or food processor)

Spices: chipotle powder, red chile, herbes de Provence, smoked paprika

Store-Bought Crazy Mayos

Empire Mayonnaise out of Brooklyn has been crafting super-wacky flavors since the company’s launch all the way back in 2011. Sign up for their “mayo of the month” club and you’ll get a rotating selection of flavors like Everything Bagel, Vadouvan (French Curry) — a variant of classic Indian masala — and Black Garlic. Other selling points from their site: “non-GMO oils, happy cage-free and pasture-raised eggs.” (Happy eggs! Who knew eggs had feelings!)

If you prefer egg-free mayo, Hampton Creek’s Just Mayo is the way to go. Their vegan mayo currently comes in five flavors, including Awesomesauce (with relish, capers and lots of other flavorings), Chipotle, Sriracha, Garlic and Truffle. Hellmann’s has gotten crafty with two hip flavors in their organic line: Roasted Garlic and Spicy Chipotle. Plus, they have a hard-to-find (but we’re hoping totally worth it) Mayonesa con Jugo de Limón (Mayonnaise with Lime Juice).
