Smoothie of the Month: Citrus

Peel all the in-season citrus you can get your hands on for a bright, fresh smoothie that’s full of immunity-boosting vitamin C.
Citrus Smoothis

As winter approaches us in North America, citrus fruits like mandarins, clementines and oranges of all varieties are just about coming into their full season. And it may be no mistake, as the extra vitamin C these delicious fruits pack in their bright, fresh flavor is just what we need to help get us through the cold season.

Thick and creamy with a whipped texture, this smoothie is irresistible in taste and texture thanks to a combination of frozen bananas and soaked nuts. Swap out grapefruit or blood orange for the navel oranges and use clementines in place of satsumas; either way, this makes the perfect quick, light breakfast on the go, or enjoy it anytime you're in the mood for a fruity treat.

Citrus Smoothie
Serves 2

1/4 cup macadamia nuts or cashews, soaked 2 to 6 hours in 1/2 cup water

3 satsumas, juiced
2 limes, juiced
2 oranges, juiced
3 frozen bananas

Drain and rinse nuts, then add them to an upright blender. Add remaining ingredients and blend until smooth and creamy. Serve immediately.
