    The Polenta with Balsamic Glazed Portobello Mushrooms sounds great except for one thing – it uses Chicken Stock – hardly vegetarian

      Thanks, Sharon! Some of us at Healthy Eats are vegetarians, and we hate when that happens! We've added a note about using vegetable stock instead.
