    Definitely tomatoes, in any form. I love fresh tomatoes out of the garden, but when they are not in season, any tomato product will do. Tomato soup, marinara sauce, tomato juice, you name it!

    Beets! So delicious – steamed, boiled, roasted, pickled…alone, on salads or in vegetable medleys! One of my absolute favorite things to do with beets though is to make beet hummus – perfect for dipping all of my other top veggie choices in!! YUM.
