Smoked Paprika Red Pepper Dip
1/2 cup cashews, toasted
1 (16 oz.) jar roasted red peppers, drained
1 (15.5 oz.) can chickpeas, drained and rinsed
1 tsp. fresh lemon juice
1 tablespoon olive oil
1/4 teaspoon smoked paprika
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
Gluten-free crackers and crudités, for serving
In a food processor; pulse until smooth. Transfer to a serving bowl.
Serve with gluten-free crackers and crudités.
