This year, add some sweetness to your dinner table and have a not-so-traditional side dish: cranberry-glazed carrots. It’s as simple as taking cranberries and carrots and combining them together for one delicious dish.
Including orange juice and zest is also a way to kick up the flavor – in a way even the kids will enjoy! To ensure this dish is not-too-sweet, add fresh mint to help bring balance.

SWEET CRANBERRY GLAZED CARROTS
1 1/2 pounds carrots, julienned
1 Tbsp extra-virgin olive oil
1 tsp. honey
3 Tbsp. freshly squeezed orange juice
1/2 tsp. fresh orange zest
1/3 cup dried cranberries
1/4 cup finely chopped fresh mint
1/4 tsp. sea salt
1/4 tsp. freshly ground pepper
In a large bowl, combine all ingredients; gently toss to combine.
Refrigerate until ready to serve.
