SWEET CRANBERRY GLAZED CARROTS
Serves 4
1 1/2 pounds carrots, julienned
1 Tbsp extra-virgin olive oil
1 tsp. honey
3 Tbsp. freshly squeezed orange juice
1/2 tsp. fresh orange zest
1/3 cup dried cranberries
1/4 cup finely chopped fresh mint
1/4 tsp. sea salt
1/4 tsp. freshly ground pepper

In a large bowl, combine all ingredients; gently toss to combine.

Refrigerate until ready to serve.
