My favorite winter produce is Escarole and Butternut Squash! Broil the Squash in a hot water bath in the oven and do a simple chicken broth and add the Escarole, diced up the squash once done, add some green onion and YUMMM! I love winter to cozy up to this little homemade veggie delight!
