Peel and seed the cucumbers, cut them into 1" x 3" sticks. Make a Dill dip with fresh dill, light sour cream and yogurt. Refreshing!

Sliced in cold water with ice or a limeade. I am enjoying a glass of limeade with cucumber slices.
I made Emeril's pickles and they were awesome! I'll have to try that other one linked too, looks really versatile which I enjoy. Tis the season to be pickling, jammin' and canning. Delicious!

Braised, a la Julia… perfection!
Cucumber and Onion Salad
4 cups thinly sliced cucumbers
1 cup thinly sliced onions
4 teaspoons salt
2 tablespoons water
2/3 cup sugar
½ cup white vinegar
Put the cucumbers and onion in a glass or plastic bowl. Sprinkle the cucumbers/onions with salt and water. Put in fridge for 2 hrs. After the 2 hrs., drain but do not rinse the cucumbers/onions. Sprinkle the cucumbers/onions with the sugar and vinegar. Stir entire mixture until sugar is dissolved. Let stand for 1 hr., stirring every 15 minutes.
Notes:
I use only about 1/3 cup of Vidalia onion instead of 1 cup of onions.
There is still a lot of liquid at the end of the recipe – I use a slotted spoon to serve.
Hollow-out halves of cuke, fill with blueberries & feta cheese, balsamic vinaegrette ( mint is optional)
II love agua de pepino just put 3 to 4 cucumbers ,wather and sugar and if you desire som mentlives

Cut thick, topped with a chunky guacamole , and clover sprouts. Yum. Love them pickled too!
