I know what you’re thinking, but adding more whole grains to your diet doesn’t have to be boring. Barley, farro, kamut, polenta and wheat berries are just a few of the grains highlighted in Ancient Grains for Modern Meals.

    I make sure to always have brown rice, whole grain pasta, couscous, and oatmeal on hand because they are easy to prepare and can be incorporated into everyday meals. I have fun with more exotic grains when I have time to try new recipes. It is fun to look for new recipes based on a whole grain.

    I have switched to whole grain bread, only use brown rice and look forward to trying more less familiar grains in 2012. Looking to replace potatoes, etc. with grains.

    I make a huge batch of brown rice, quinoa, or steel cut oats every weekend to eat throughout the week. It makes getting whole grains into your diet easier when there's already a cooked container in the fridge. I also love to use polenta as a base for tacos and shredded BBQ chicken or pork.

    I love grains in general so they are always around me. Rice, Quinoa, oatmeal, granola! yummm. And the best part is the possibilities are endless. Rice with onions, basil, thyme, oregano. Quinoa with chicken stock and tofu, mushroom, and onion (or what about sun dried tomato, artichoke, spinach, and chickpeas!), Oatmeal with peanut butter and banana! and homemade granola!

    I'd love the book to expand my options though!! :)

    I make my own whole-grain breads and eat hot multigrain breakfast cereal every other morning.

    I cook a big pot of steel cut oats to have on hand for breakfast. I also make my own bread, adding, a few whole grains in addition to the whole wheat flour which I grind myself.

    As a recent college grad with a tight budget, I have oatmeal most mornings. It's healthy and cheap!

    I try to eat oatmeal most days for breakfast and incorporate a whole grain into dinner each night — currently loving red quinoa.

    I ensure I have a whole grain in every meal…I love rolled oats in my morning smoothie, quinoa in my lunch salad, and I cook large batches of brown rice and keep in 1/2 cup servings in the freezer for quick dinners! Would love to have a recipe book to help me expand my options!
