Joy Pierson, co-owner of one of New York city’s best-loved vegan restaurants, Candle 79 along with chefs Angel Ramos and Jorge Pineda  have a brand new cookbook out,  filled with their favorite meatless recipes, plus ones customers can’t seem to get enough of. The group is so passionate about the food they serve; the chefs were the food stylists for the book’s over-the-top images.

“It’s our customers who say, ‘I love that avocado soup. I want the recipe,’” Joy says. “People really want to eat this way, so we’re giving them the tools.”

Everything from the book is easy to execute using farmers’ market organic products, she says.

    Vegetarian Thanksgiving Menu: Butternut squash soup, kale greens w cashew sauce, mashed yukon gold potatoes, stuffing (w veg. broth & twin oaks chorizo flavored veg sausage, garlic, celery & onion, optional nuts), cranberries w orange & ginger, roasted root vegetables, corn bread, pumpkin dessert.

    Oooh, I don't know. I'm a huge dessert fan, but my mom makes the BEST green beans! Those with a little bit of mashed potatoes is Heaven! :)

    If it was up to me, I would have an all vegetarian thanksgiving. Unfortunately, I am the lone vegetarian of my family (vegan would be near impossible). But that won't stop me from contributing as many vegetarian options as possible! Favorite? Brussel Sprouts with chestnuts and pecans!
