Joy Pierson, co-owner of one of New York city’s best-loved vegan restaurants, Candle 79 along with chefs Angel Ramos and Jorge Pineda  have a brand new cookbook out,  filled with their favorite meatless recipes, plus ones customers can’t seem to get enough of. The group is so passionate about the food they serve; the chefs were the food stylists for the book’s over-the-top images.

“It’s our customers who say, ‘I love that avocado soup. I want the recipe,’” Joy says. “People really want to eat this way, so we’re giving them the tools.”

Everything from the book is easy to execute using farmers’ market organic products, she says.

  2. I love all of the savory vegetarian side dishes from Thanksgiving. This year, I am most exciting about my mushroom stuffing!

    Mashed potatoes (to make it vegeterian, substitute regular butter for Smart Balance, and instead of regular milk you can use soy milk), green beans, apple and pumpkin pie. I also love grilled vegetables – carrots, bell peppers, zuccini, tomatoes, red onion. Just add any spice of your choice or plain salt and pepper and enjoy.

  4. My favorite Thanksgiving veggie dish is my sister's sweet potato spoonbread. YUM!

    I'm a big fan of the side dishes- stuffing, sweet potato casserole, and roasted asparagus. I could make a meal just out of those. Yum!

    This year is my first vegan Thanksgiving and I'm so excited!!!!!!!!.
    I'll be making veggi stuffed pot stickers, beans and mushroom patties, bread crumb stuffed bella mushrooms, baked brussels sprouts, vegetable fried wild rice, apple cinnamon rolls and more. ^^

    My favorite part of Thanksgiving is all the veggies! Mashed potatoes are always a favorite, but I will have to go with fresh green beans sauteed with garlic and apple cider vinegar!

    My favorite meatless dish is sage dressing…or is it maybe the cranberry sauce…no, the apple pie….
