Our Brown-Bag Challenge is winding down, there’s just one week to go. Think you’ll make it to the end? Would a fancy new bento box keep you motivated? You can buy your own, or you can tell us about your lunch here for a chance to win one. Either way, when you get it, you can fill it with salad, pasta, stir-fry or even sushi. It’s easy to tote and it won’t take up a lot of room in the office ‘fridge and you can clip your fork (or chopsticks) to the top. It’s microwave and dishwasher safe, and BPA free.

    My favorite brown-bag lunch? It's Tortellini skewers: Take some cherry tomatoes, some olives (black or green) , and cook your favorite cheese-filled tortellini. Let the tortellini cool. Put all three items in a bowl (the tortellini can be replaced with mozzarella cheese) and toss with oil, vinegar, salt, pepper and maybe some garlic. Then get some bamboo skewers and put 4 things on each skewer — mix them up for variety (-tomato-tortellini-tomato-olive- then -olive-tortellini-tomato-olive. You get the idea). My son loves to take this to school — fun to eat and his friends all get a little jealous at the "fancy" lunch (that is oh, so easy!) Then a nice healthy drink and maybe a cookie. Perfect!

    Brown rice balls wrapped with seaweed, steamed broccoli w/ ginger dressing, tofu salad + apple slices :)

  3. Brown Bag lunch today is Hungarian Salami sandwich with German butter cheese on light rye, peanut butter apple, Orange slices and Greek Yogurt. Now if I had the bento box well I would have had Teriyaki Chicken on brown rice, with Gyoza and California Rolls or Cappa Rolls.MMMMM Yum!

    I brought leftover asparagus, onions and mushrooms to add to some eggbeaters. That and a slice of seede rye toast is the lunch I bring 2-3 days a week. I Love It!!

    A vegetarian stir fry with a sweet chili sauce a peach and a vanilla yogurt…mmm! Most of other days are just a simple salad. Lettuce, kale, maybe some sprouted beans, tones of other veggies, avocado, a few nuts for crunch and a bit of cheese with a vinaigrette.

    I like Barbecue Chicken bites or buffalo with ranch dressing, baby carrots, apple slices, sugar free pink lemonade and popchips!

    Amongst me and my husband we’ve owned much more MP3 gamers over the years than I can count, which includes Sansas, iRivers, iPods (common & touch), the Ibiza Rhapsody, etc. But, the last few years I’ve settled down to one line of players….
