Our Brown-Bag Challenge is winding down, there’s just one week to go. Think you’ll make it to the end? Would a fancy new bento box keep you motivated? You can buy your own, or you can tell us about your lunch here for a chance to win one. Either way, when you get it, you can fill it with salad, pasta, stir-fry or even sushi. It’s easy to tote and it won’t take up a lot of room in the office ‘fridge and you can clip your fork (or chopsticks) to the top. It’s microwave and dishwasher safe, and BPA free.

    Would love to win, so many other tasty brown bag entries! For lunch I brought mashed potatoes with the skins left on, Sauteed chicken breast with red and green peppers, red onion and mushrooms in chicken gravy. Since I do not have a bento box, the chicken breast was in a ziplock baggie, the gravy and veggies in a container, and the mashed potatoes in a bowl covered with plastic wrap…….ugh, the bento box certainly would make life easier!

    Been addicted to oatmeal lately. Stovetop oatmeal mixed with peanut butter, apricot jam, and omega trail mix from TJ. Frozen in individual bowls. When I get hungry I just pop one into the microwave at work.

    I'm a salad lover. Yesterday's brown bag was baby arugula with cranberries, walnuts, and a bit of gorgonzola cheese with raspberry vinagrette. I did have some low fat potato chips with it. We all have our weaknesses.

    Love bring my own lunch! I brought leftover sauteed chicken with browned butter and almond brown rice. Very healthy but tasted much more decedent!

    Turkey, Swiss cheese, red lettuce, and Dijion mustard sandwich on wheat bread!

    I love bringing sack lunches! My favorite healthy option is to take a whole wheat tortilla or flatbread, spread some tomato sauce on it, and top it with veggies and fat free cheese! Then, I roll it up and cut it into sushi pieces. Yummy!
