Gluten-Free Girl’s Rhubarb Cobbler by Shauna James Ahern in Gluten-Free, May 13, 2011
With spring finally in full bloom, rhubarb is back in the farmers’ markets and our gardens. If you’re anything like us, you’ll want to eat it every day until you’re tired of it. Sure, there’s rhubarb-strawberry pie, but this cobbler is wonderfully quick and easy to prepare and happy in the eating.
If you find you cannot eat oats, even if they are certified gluten-free, you might want to try quinoa flakes here instead. Don’t worry about the mess of the juices bubbling over the pan. That’s how you know this dessert is done.
Gluten-Free Rhubarb Cobbler
Yield: 6 servings
Ingredients:
2 cups chopped rhubarb, cut into 1-inch pieces
1/4 cup chopped crystallized ginger
1/2 teaspoon cinnamon
Zest and juice of 1 orange
1/3 cup honey
40 grams (about 1/4 cup) brown rice flour
1 cup certified gluten-free rolled oats (or quinoa flakes)
1/4 cup tightly packed muscovado sugar
1/2 teaspoon cinnamon
60 grams (about 1/4 cup) butter, slightly softened, cut into 6 pieces
Directions:
Preheat the oven to 350 degrees.
Combine the rhubarb, ginger, cinnamon, orange zest, orange juice, and the honey in a 9-inch pie pan. Toss them all around until everything is coated with the honey. Pat the fruit down into the pie pan.
In a large bowl, combine the brown rice flour, oats or quinoa flakes, muscovado sugar, cinnamon, and pieces of butter. Using your hands, mix everything until it feels like damp crumbs the size of peas.
Sprinkle the topping evenly over the fruit.
Bake until the topping is browned and the fruit is bubbling. Take the cobbler out of the oven and let it cool for 30 minutes before eating.

I love rhubarb and this sounds delicious but do you grease the pie pan first? I've had bad experiences with sugary fillings sticking.
Also, why are there volume and weight measurements? How much does a "lightly packed" quarter cup of sugar weigh because it seems like that's kind of subjective depending on the baker. Or does it even matter?
Thanks!
Sounds wonderful — I just made some rhubarb bread pudding using GF cinnamon-raisin bread, which was also delicious. I'm loving having options for rhubarb other than compote.
MUST try this, love bread pudding! Thanks for the suggestion.
Thanks much, though I could have sworn it said "lightly packed" yesterday! Now it says "tightly"! Maybe I'm seeing things!
My Wife Makes the Best Strarwberry-Rhubarb Pie in the World with Rhubarb from Jones

This sounds great, we love rhubarb and can't wait to try it with the quinoa.
What are quinoa flakes? I don't think I have seen them. I'm loving auinoa now that I have discovered it!
I got it at New Seasons Market Portland OR
Just made this awesome dessert, I didn't have crystalized ginger so used a 1/2 t ginger spice, tangerine instead of orange and coconut oil instead of butter. First time using quinoa flakes (oatmeal like). Excellent!!
This is delicious! I doubled it and put it in a 9×13 pan. Also used 1/2 rhubarb and 1/2 strawberries and ground ginger for crystallized ginger. The ginger and orange were a nice touch. The topping had a good texture and flavor.
What is muscovado sugar? Even Wegman's never heard of it. Could I substitute brown sugar?
