    I like to place a butterflied piece of Salmon (Pacific Northwest) on a large heavy duty piece of aluminum foil. Olive oil, a pat of butter quartered along the length followed by a bit of kosher salt, fresh cracked pepper, fresh dill, sliced onion and a sliced orange a sliced lemon or two and a slice lime. Fold the foil over into a not perfectly sealed packet and throw onto the grill. To serve, simply pull off all the toppings and slide onto a warmed platter. Cooking time depends on size and thickness, but be sure to not overcook, and allow to rest for at least ten minutes before opening up the pouch, giving you time to grill some veggies…
