Katie's Healthy Bites: Post-Halloween Pumpkin Butter
Now that Halloween is over, swipe a pumpkin from your fall display and cook up this quick, easy pumpkin butter. Whether spread on toast or spooned onto oatmeal, this seasonal treat is a must-try!
1 16-ounce can unsweetened, unseasoned pumpkin puree (or 2 cups fresh pumpkin puree)
Combine all ingredients in a small saucepan. Simmer for 30-45 minutes, or until thickened, stirring occasionally. Cool and refrigerate in an airtight container. Lasts about two weeks.
