    One of my faves is Roasted Veggie Sandwiches w/Sweet Herbed Ricotta. They are incredibly tasty, easy, healthy and economical. Under $10 and under $20 meals just happen to be my specialty…espec if they can be made ahead!

    please help!! i am a very picky eater and trying to lose 20lbs of post pregnancy weight and i am on a very tight budget! i dont like alot of cooked veggies and the only greens i like are brocc. and spinach. i would really like a way to get good nutrients but i just cant choke the good stuff down. its mostly a texture thing,please help?

    I always keep a box of powdered coconut milk and a jar of curry paste in my kitchen… big tablespoon of powdered milk and curry paste in water, pour over some frozen veggies and a few pre-cooked shrimp in a frying pan, and make rice while it all it heats up. Super easy, fast, and healthy!
