I spotted piles of these spectacular red-and-white root veggies at the farmers’ market and had to scoop them up. These crunchy spring veggies  taste even better than they look.  Pick up a bunch of these calcium-packed superstars while they're in season!

How to Enjoy French Breakfast Radishes

Munch on them solo or use these slender and delicate radishes to give some crunch to salads, salsas and stir-fries. They’re a little less spicy than other varieties, but still have that “radish-y” bite.

At the market they suggested serving them with bagels and cream cheese, so I made a fresh and light veggie spread.

Vegetable Cream Cheese
8-ounces low fat cream cheese, softened
1/4 cup finely chopped radishes
2 tablespoons finely chopped scallions
1/2 teaspoon grated lemon zest
1/4 teaspoon kosher salt
Freshly ground black pepper to taste

Combine ingredients in a small bowl and mix well.
