Spotlight Recipes: 25 Vegetarian Favorites

Whether you’re a committed vegetarian or vegan or just want to try something new, meatless meals provide great variety to your dinner table meal line-up. They can be both delicious and healthy (foregoing meat isn’t an excuse to eat cheese pizza every day!) We chose 25 tasty recipes covering all of the major food groups vegetarians should be eating (these are healthy picks for meat-eaters, too): fruits and veggies, whole grains, beans/legumes, nuts, and seeds.

All of these recipes are vegetarian-friendly, although some call for eggs or dairy products. Those marked with a (v) are vegan, meaning they use no animal products — no butter, eggs, cheese, honey, etc. And like all our recipes, each has fewer than 450 calories and 15 grams of fat.

    Thanks for answering my question Dana. Next question; How would I determine how many teaspoons are in a gram of sugar when I'm reading the label of, let's say, yogurt? The label measures in grams and there are 27 grams of sugar in one serving. How do I convert that in order to stay within the 8 teaspoons a day recommendation?

  2. Actually, all the worlds’ best are here. I was wondering how the entire list would have been like without numbers 1 and 19. An associate of mine made the Vegetarian Summer Roll recipe but without tofu (she had her own substitute – but still tasted right) and the Eggplant Dip with Pomegranate and Tahina is one my top 10 elsewhere. So this post has a lot of personal coincidence for me.

    Vegetarian Chili is very interesting. Not only Beef eaters and bacon consumers can have all the fun with spicy dishes. People going vegetarian now have their turn with this simple yet delicious food featuring all you can have with top spices – jalapeno, chili powder, oregano and black pepper. This is a 2006 recipe but quite amazing that rackS up great positive reviews.

    I am so thrilled to see this — bravo, FN. As a young and up and coming vegan chef I dream to appear on the FoodNetwork but always had the sense FN wasn't veg-friendly. You've proved me wrong. BRAVO.

    These recipes look AMAZING!! As a somewhat new vegetarian… it's SO helpful to have FN post these recipes. NOW… I only wish FN had a chef that was devoted to healthy veg-cooking.

    I would absolutely LOVE to see Happy Herbivore on FN. Her recipes are amazing… if you don't know about her… check out her blog! ….her recipes are SO yummy and super creative …. girl makes black bean brownies and butter bean cookies!!
