I have a problem that my husband does not like eggs ( unless in cake), cooked vegs. (only salads), and not a fan of chocolate either. Help with menu ideas ……… MJ
You could always do a Steak & Potatoes dinner. There are some cheaper steak cuts if you are looking for those, but right now there should be some sales. Ribeye steaks, flat iron steak, flank steak, and sirloin steaks are usually a little bit more modern priced. Potatoes you could mash them or cube them and roast them with some olive oil, salt, pepper, garlic powder. For dessert since he doesn't like chocolate or eggs except for in cake, you could do a berry crumble/crisp. There is a great recipe for it on Food Network for a three berry crisp that you can use frozen or fresh berries of your choice.
Here is a great recipe that my husband cannot get enough of it is the Barefoot Contessa- white chicken chili this stuff is fairly healthy and my family goes crazy I add alittle extra cumin and red pepper to our taste makes a great dinner
I also cook corn on cob 2 or 3 regular sized ears and cut off cob and add to chili adds great color so looks as good as it taste-
I am not much of a chili eater but this is really good chili
We have left overs if i make double batch I will add pasta to leftovers (bowtie) or sometimes rice just to make it a little different
AS far as dessert yo could make a berry fruit salad- with fresh blueberries-cherries-strawberries
and rasberries and serve with some whipped cream makes a great dessert and has all the colors of valentines hope this helps some
if you want to make a very moist cake with out eggs . all you need is a box cake mix and a can of soda (diet, sweet, any flavor or club soda will work even if it is flat it still works) you take a box cake mix empty it into a bowl break up the lumps and than fold in a can (12oz ) of soda any kind pour into cake pan or muffin pan bake . I and some friends have been making our cake like this for years now
