FN’s Top Recipes, Lightened Up: #2 Paula’s Old-Fashioned Meatloaf by Toby Amidor in Healthy Recipes, Meal Makeovers, February 1, 2010

It’s no surprise that meatloaf ranks high on Food Network’s Top 50 Recipes of 2009 list — who doesn’t love meatloaf?! And a Paula Deen meatloaf, at that! Ms. Deen isn’t known for her low-cal dishes, but we’ve got some simple tips for slimming this comforting classic.
A Lighter Loaf
Believe it or not, this simple recipe covers 45% of your recommended dose of vitamin C (from the tomatoes) and 20% of your recommended amounts of iron (from the beef). The heart healthy oats adds a touch of fiber and the suggested 4-ounce portion is just right.
To lighten it up, it’s all about choosing the healthiest ingredients. For the ground beef, opt for 90-95% lean. When you use 90% lean ground beef, this recipe contains 330 calories and 15 grams of fat per serving. You can also substitute part of the beef for ground turkey breast , veal or pork.
Mindful Topping
Although ketchup is not a high-calorie, fatty ingredient, it is made with sugar. Read the label to make sure your preferred ketchup doesn’t include high-fructose corn syrup. You might also try to make your own.

I've made the mini meatloaves they have on the Food Network website, which I absolutely love. It uses an even amount of ground sirloin, turkey, and pork., which really gives the best of all worlds: lean meat, a little fat, and flavor And rather than using ketchup, I just top them with a little tomato paste while they cook.
Paula, I was looking at one of your show where Jamie made his wife's meat loaf I would love to have that recipe. would you mind sending it to me it looked sooooooooooogood I just have to try it.
