Spotlight Recipe: Peach French Toast Bake by Dana Angelo White in Healthy Recipes, February 2, 2009

I made this decadent treat for brunch recently. Topped with maple syrup and Greek yogurt, it made my guests go wild! Since peaches aren’t in season, opt for frozen; they are just as good for you. Better yet, whole wheat bread adds five grams of fiber per serving.





A great way to lighten up your foods is Agave Nectar. It’s a low GI sweetener that won’t spike your blood sugar. The darker variety (amber) tastes like a cross between honey and molasses) great on Oatmeal, and/or pancakes, etc.
This is delicious! I make it on sunday and eat it all week for breakfast- canned lite peaches (rinsed of course) work well too!
