Friday night at the New York City Wine & Food Festival was spent just how you would expect: with dancing, drinks and lots of food. Night owls made their way to The Bowery Hotel in downtown Manhattan, where Rachael Ray and her husband, John Cusimano, brought their signature South by Southwest music and cocktail party, Rachael Ray’s Feedback, to the Big Apple. The Bowery Hotel’s glamorous, luxurious and vintage-style terrace proved the perfect place to unite Rachael and John’s shared love for food and music. Boasting the rockin’ vibes of Austin (the live music capital), special bar bites curated by Rachael herself and libations handcrafted by award-winning chefs, this late-night party bled into Saturday.

In Food Network’s new series Rachael Ray’s Kids Cook-Off, premiering Monday, Aug. 24 at 8|7c, eight junior chefs will put their exceptional cooking chops to the test as they compete for a $20,000 culinary scholarship and their own Web series on FoodNetwork.com. The pintsize competitors will be tested with on-camera challenges and high-pressure cooking obstacles as they attempt to impress host Rachael Ray. But they’re not only gaining the approval of Rachael — they’ll also be competing in front of an all-star guest judge each week, including Sunny Anderson, Robert Irvine and Alex Guarnaschelli.
The kids range in age from 11 to 13, but you’d never guess that by the looks of the food they can produce, including out-of-this-world pasta dishes and pastries you have to see to believe. The chefs have their own signature styles, coming from California, Colorado and everywhere in between. Tough challenges will allow the best of the best to rise to the top, but only one can be crowned the champion.
No matter how hectic the day has been or how spent you may feel come dinnertime, meals still need to get on the table, and for those times when you’re left uninspired, Rachael Ray has a few tips for not just cooking food but relishing that experience in the kitchen too. At her live demo during this winter’s South Beach Wine & Food Festival, Rachael explained to a packed audience that the key to enjoying cooking involves both a relaxed state of mind and preparation. “Get yourself in a good mood somehow,” Rachael said. For some, that may involve music, and for others, a glass of wine may do the trick. “You can also get way ahead,” she suggested, explaining that on days when you’re not pressed for time, invest the effort in preparing a few make-ahead dishes, so that you’ll have them when you need them.
When it comes to hosting a party at home, there are two groups of people: those who panic and those who prepare. If the mere thought of cooking for a crowd sends you into cold sweats, chances are you’re part of the first group, but it doesn’t have to be that way. All it takes to be prepared for your next big bash is having a plan for the meal, and for that, Rachael Ray likes the bar approach.
During a live demo with her husband at the South Beach Wine & Food Festival last month, Rachael dished on what she calls “a cheap and cheerful way to entertain.” She set up a bar of fixings for her chicken fajitas, like lettuce, radishes, cheese and crema, and explained that when re-creating the meal at home, each guest could be responsible for bringing just one portion of the spread. “Everybody can participate,” she said. That means that instead of all the pressures of the party — the shopping, the cooking, the plating (and the panic) — being put on you, the host, your friends can help out by contributing to the meal. And with everyone creating their own versions of their ultimate meal, like fajitas or tacos or pizza, you can be sure that each guest will get exactly what he or she wants.

This year’s Daytime Emmy Award nominations are out, and the cooking-show sector was well represented among the nominees. Food Network was honored by the National Academy of Television Arts & Sciences with five nominations. Cooking Channel got four. PBS and syndicated culinary shows were also among the nominees in various categories.
Food Network’s Bobby Flay’s Barbecue Addiction and Giada At Home, and Cooking Channel’s My Grandmother’s Ravioli were nominated for Outstanding Culinary Program, as were PBS’s A Moveable Feast with Fine Cooking, The Mind of a Chef and the syndicated Beer Geeks.
Bobby Flay and Giada De Laurentiis were both also nominated in the category of Outstanding Culinary Host for Bobby Flay’s Barbecue Addiction and Giada At Home, respectively, as was Rachael Ray for her Food Network show Rachael Ray’s Week in a Day. The Mind of a Chef hosts April Bloomfield and Sean Brock shared a nomination, rounding out that category.

1. Adding fresh lemon juice to a recipe? Squeeze the lemon cut-side up so the seeds don’t fall into your food.
2. Measure spices into your hand, instead of over your mixing bowl or pan. That way, you’ll never have to fish anything out if you make a mistake.
3. After cooking fish, get that stinky smell out with a bit of booze: While the pan is still hot, douse it with a splash of dry vermouth and swirl it around. (Caution: It may flame.)
4. Cut down soaking time for dry beans by pouring boiling water over them first. Let stand for 1 hour, rinse, then proceed with your recipe.
