Round 4On tonight’s episode of the Chopped Tournament of Stars, four actors entered the competition to take on the reality of competition. They would realize that this wasn’t just another role for them to play; no amount of acting could save a dish from the Chopping Block. Still, only one could walk away as the winner of the round, with a chance to go to the finale and earn $50,000 for charity. These actors learned the competition is a lot harder than it looks on TV. Most often used in Italian cooking, escarole is a slightly bitter lettuce that you’ll commonly see in soups and sometimes salads. But there’s more to this leafy green than meets the eye. A quick saute in some oil and garlic turns it into a simple side dish, but using it in these Escarole Quesadillas along with cheese transforms it into main dish territory. Though these four funny people can be pretty silly in their profession, when it came to competing, all of them showed that their dedication was no laughing matter. The winner of the round is going on to the finale, where only one competitor will walk away with the title of Chopped champion and $50,000 for charity. These comedians learned that the pressure of doing live standup, improv or television is no comparison to the pressures of the Chopped kitchen. Chia seeds have become very popular in the health food market in the past few years because they’re actually quite good for you, packed with healthy fats, fiber, protein, vitamins and minerals. Usually chia seeds are mixed into yogurt, oatmeal, juice or tea, but this recipe for Chia-Crusted Salmon with Soy Bok Choy uses the seeds as a crispy baked coating, creating a new spin for your family that’s both healthy and flavorful.

This classic comfort food gets remade by swapping regular broccoli with broccoli rabe, which lends a spicy and slightly bitter taste to the soup. Mussel CioppinoFor this week’s Chopped Dinner Challenge, the chefs of Food Network Kitchen chose to feature the basket ingredient mussels. One of the best ways to enjoy these iridescent shellfish is in a soup or stew, so the chefs came up with this recipe for a simplified cioppino. Traditionally the classic Italian-American seafood stew is made with a variety of fish and shellfish — and for a fisherman that would typically be whatever was the catch of the day. This version uses just mussels, which are relatively inexpensive and very flavorful all on their own. If you can imagine yourself taking a big hunk of bread and dipping it right into the sweet, spicy, tomato-based stew, then this Mussel Cioppino is meant for you.
