When it’s blustery and cold outside, few things will do the job of warming you up quite like a hearty casserole. But thanks to hectic schedules (and the ability to go from hungry to hangry in just a few minutes), there’s not always time to settle into the kitchen to prepare one. Enter: A timesaving solution. On this morning’s all-new episode of The Kitchen, the co-hosts introduced a duo of chicken pot pies, but neither was presented in the traditional big-batch format. Instead, these brand-new recipes put an individual-serving spin on the pot pie, proving that this tried-and-true favorite can be transformed in a speedy way. Read on below for two weeknight-friendly takes on pot pie, each a can-do meal fit for the whole family.

On weeknights, getting dinner on the table is more a matter of survival than it is an act of creativity. Monday through Friday, I rely on the same 10 or so meals to keep us fed. These are the things I know by heart and can make without consulting books or a website for measurements or cook times.
When the weekend rolls around, I’m ready to stretch my culinary legs a little bit and try something beyond my standard turkey burgers and roasted broccoli, delicious though they may be. Don’t get me wrong — I’m not cooking up 10-course gourmet meals, but I do try to pick at least one recipe per weekend that requires a bit more time and energy. Around these parts, we call that dish The Weekender.
This last Sunday, we had plans to gather with friends for dinner. My promised main dish needed to be portable, made with poultry and outrageously delicious. The recipe that fit the bill? Ina Garten’s glorious Chicken Pot Pie.

We’re celebrating with this gravity-defying wonder from Paula Deen — Savannah High Apple Pie. I mean, c’mon — apples are in season, it’s Paula and this looks amazing. Has anyone ever tried?
If you’re saving your sugar for Valentine’s Day, you MUST whip up this savory treat from Ina Garten. My mom usually sticks with her favorites but made this Chicken Pot Pie and knocked it out of the park. I’m actually craving it now — ah, that buttery pastry topping.

The head honcho is traveling, so my latest spy mission wasn’t that covert. Without worrying about colleagues sneaking up behind me (forcing me to scramble for a work-related Internet window), I emailed my buddy and FN executive chef here at FN, Rob Bleifer for an interview. My FN inner fanatic soared midway through his email: “How about next week? Ellie Krieger is taping some web shows in the FN Kitchens right now.” Love. Ellie.
A brilliant idea came in the form of an interoffice envelope. I whipped up a label reading “Important for Rob Bliefer” and scurried to the kitchens. After a friendly hello from big-smiles guard Clarence, I slithered through the swinging door, towards Rob’s homey office. Cameras were rolling, lights were blazing and Ellie had spatula in hand.
She’s taping 12 shorts, called Healthy Meal Makeovers with Ellie Krieger. Don’t let the “healthy” term deter you. Ellie will be whipping up dishes like Better Beef Lasagna, Sesame Shrimp Fried Rice and an amazing veggie quiche. I hungrily watched the china-doll-esque chef create a healthy version of chicken pot pie….yummy. How the heck do you make chicken pot pie non-artery clogging? Ah…stay tuned. Think stir fry with down-home comfort. If only I could have snuck a taste…
