Beyond the Turkey: All About Wine on Thanksgiving, According to Alex Guarnaschelli

Alex GuarnaschelliWith so much focus on executing the all-important turkey, mashed potatoes and casseroles, it’s often easy to overlook what comes next on Thanksgiving, after the prep work is done: the actual eating of the turkey, potatoes and casseroles, of course. With eating comes drinking, especially around the holidays, and just as you invested time in planning an epic feast, so too can you find an extra-special wine to round out the meal. Recently we caught up with Alex Guarnaschelli at an event in New York City in which she partnered with Woodbridge by Robert Mondavi wines to showcase her secrets for transforming turkey-day leftovers with Woodbridge wines. The Iron Chef and Chopped judge was quick to point out that there are no hard-and-fast rules for both drinking and cooking with wine.

“You write a rule book and then we just break it,” she said of pairing wine with Thanksgiving dinner. “Turkey’s one of those things. In a way, I would almost say you could do a platter of the white meat and a little bit of stuffing and some green bean casserole, and have a nice, crisp Chardonnay. Then you could go in the other direction: Take some of the dark meat, some cranberry sauce, some stuffing and have a glass of Cabernet Sauvignon,” she explained, adding that there are possibilities for personal preference. “Depending on how you lay out your plate, you could really drink either.”

Recently FN Dish caught up with Alex Guarnaschelli at one such alfresco feast, where she was celebrating the launch of her partnership with Woodbridge by Robert Mondavi to create a line of cookout-ready wine-infused barbecue sauces (you can buy them here). From her picks for seasonal entertaining to the secret to make-ahead appetizers, she shared her top ideas for summertime cooking, plus dished on what she piles on top of her ultimate burger. Read on below to hear what she had to say in an exclusive interview.

What’s your favorite way to entertain during the summer?
Alex Guarnaschelli: For a barbecue or a cookout — from Memorial Day through Labor Day and maybe even into October — I’m really big into the outdoor stuff. Because chefs are always locked indoors, we really appreciate those spring and summer months. I like to go nuts, and I think the best way to do that is to prepare a lot of stuff in advance. I definitely load my fridge door with a few salad dressings, vinaigrettes, sauces, the Woodbridge Wine ‘Cue sauce. I might take that Woodbridge Wine ‘Cue sauce and take it in a direction — I’ll add a big dose of fresh ginger, put it on shrimp. I’ll take that barbecue sauce and I’ll add a huge hit of chili powder and I’ll put it on a pork shoulder. You know, I might just take the personality of it and pull it. Because it’s got that wine flavor, those tannins. It’s almost like a dry barbecue sauce, like in the good sense, like a dry wine. I think that having all that stuff done in advance, for me, is huge. So when you talk about how charming it is, the butterflies and the unicorns and the rainbows, for me, it’s great when I have company over and I’m outdoors and I’ve lit the little tiki lamps and the food is out and people are drinking and we’re laughing and I’m not going back in the kitchen.

From the crowd of company seated at the dining room table to the crowning turkey centerpiece and the 10 or so side dishes flanking the buffet, it’s no surprise that those who enjoy cooking for strangers in restaurants would love even more to cook for their families at home, and Iron Chef Alex Guarnaschelli is no exception. “It’s my favorite cooking holiday,” Alex told FN Dish of turkey day when we caught up with her recently. For her, Thanksgiving comes twice — once at her restaurant and again with her family—and she notes, “I try to make everything from scratch.”

What does Thanksgiving look like at your house? What kinds of traditions do you celebrate?
Alex Guarnaschelli: I have two Thanksgivings every year. The first one I do at the restaurant with my restaurant family, and we cook a whole big spread and we sit down, no matter how busy we are, and we take the time to hang out. And then I cook for my parents. My parents like to eat out in a restaurant, which is kind of embarrassing for a professional chef to be caught, busted, in a restaurant on Thanksgiving. So, if my parents really want to go out, we go out, but then I cook a whole spread at home for my daughter and my parents. And I try to make almost everything from scratch. It’s my favorite cooking holiday of the year. It’s a time, I think, when a chef just goes nuts and just does everything, and so I want to make sure I don’t miss anything.

Alex Guarnaschelli's Top 3 Tips for EntertainingAlex Guarnaschelli puts her culinary chops on display daily at her New York City restaurants Butter and The Darby, but she also knows a thing or two about entertaining a crowd (especially during the holidays). When FN Dish caught up with her at the New York City Wine & Food Festival, she was throwing a jazz brunch in the newly renovated Butter, featuring dishes from her debut cookbook, Old-School Comfort Food. Though the event was small and intimate, her entertaining ideas work for any occasion — big or small:

Mix up the menu. You don’t have to serve an entire buffet of right-out-of-the-oven hot dishes. A mix of both hot and cold bites not only keeps the menu interesting, but it also gives you more time to mingle with guests. Try putting out an assorted meat plate with some dried fruits, toasted nuts or a mix of cheeses. It’s an elevated way to serve a wider variety of food without making more work for yourself. Alex recommends pancetta, culatello ham, mustela loin and capocollo Calabrese. Don’t forget to set out grilled bread or pita too.
