While they’re learning lessons and taking notes, what about the other side of the truck — the customers?

We all know the rules of the game. Put your napkin on your lap, don’t eat with your hands (unless when appropriate), keep your elbows off the table and so on. But those rules apply to meals at a table. With a new generation of foodies comes an all-new set of rules for eating sans table at food trucks. You didn’t learn these tips in cotillion, no sir! Road Trip: Eat Like a Food Network Chef in Los Angeles

The third season of The Great Food Truck Race hit the road last Sunday in Los Angeles, the City of Angels. Not only is L.A. the most populous city in California, it houses thousands of food outlets including restaurants and food trucks, featuring every cuisine imaginable.

For the next couple of weeks, we’re following the Food Trucks city by city with our guide of the best eats, compiled by the On the Road app and website. Today we’re exploring Los Angeles, but come back next week for our picks in Arizona.

Sandwich King Jeff Mauro joins the Food Network prime-time lineup this fall with a new half-hour series called $24 in 24, where Jeff discovers the best cheap local eats in cities across America. Each week, he’ll hit a new locale with a budget of just $24 to find the tastiest breakfast, lunch and dinner in town.

From unexpected mom and pop shops to globally inspired spots, Jeff’s coast-to-coast journey proves great food doesn’t have to break the bank. But can you really find good food for just $24? You absolutely can: “The beauty of this great country is that you can always find plenty of great food for a great price. There are so many interesting and affordable unearthed joints strewn about the ethnic enclaves that are so common in even the smallest of American cities,” Jeff added. He continued to say that showcasing great, family-run establishments that haven’t had much publicity and celebrating their food is one of his favorite things about this new show. “That, and watching myself eat on camera, which is always ultra-sexy!”

Jeff hits Boston, Chicago, Cleveland, Los Angeles, Minneapolis, New York City and Philadelphia in the first season of $24 in 24, which premieres Monday, September 24, at 10:30pm ET/PT.

Robert Irvine’s Top 5 Most-Memorable Restaurant Impossible Episodes

In honor of the 50th episode of Restaurant: Impossible, “Behind the Impossible,” Robert Irvine sat down with us at the Atlantic City Food and Wine Festival at Caesars Hotel & Casino (where he spent time as their culinary director at the beginning of his career) to share some of his most memorable moments from past seasons. While he did have a party in Philadelphia to celebrate the milestone, he’s already filming future episodes saying, “it’s 50 and then we keep on going.”

Under the Crust Says Goodbye — The Great Food Truck Race

The third season of The Great Food Truck Race hit the road tonight in Los Angeles with eight new teams — and not one of the teams had ever worked, cooked or driven in a food truck up until this point. With a grand prize of $50,000 on the line and the chance to keep their truck, each team will try to pull out all their tricks to stay in the game, but ultimately, one truck must go each week. Every Sunday night, FN Dish will bring you exclusive exit interviews with the latest Food Truck contestants to get the boot.

This week, Under the Crust seemed to face one challenge after another with their equipment, not to mention choosing poor locations and the basics of just getting to know their truck for the first time — and unfortunately, Hannah, Sheri and Gary had to give the keys of their truck back to Tyler.

Let’s Get Rolling: Tyler Florence on the New Season of The Great Food Truck Race

We’re just hours away (10pm/9c) from the start of the third season of The Great Food Truck Race and while we’ve been previewing each truck on FN Dish all week, who better to kick off the new season than Tyler Florence? We caught up with him on the set of Food Truck and asked him to give us a sneak peek of what we can expect. How does this season compare to last season?

TF: I’m really excited about the third season because we’re changing up the rules of the game. Instead of professional food truck operators, we’re flipping the whole thing on its side. We looked for teams that would love to have a food truck — really confident people and fantastic chefs that would really love to get into the food business. They’re going to compete for a chance to win their very own food truck and that’s the grand prize at the end of the race.

Why do you enjoy being a part of this show?

TF: I try to be part of the solution because we are giving people the courage to do this themselves and people are doing well as a legit business. I’d much rather pay $6 for a food truck meal than in a fast food chain. It’s encouraging people to be in business for themselves.

Seoul Sausage’s Yong Kim, Chris Oh and Ted Kim are first-generation Korean-Americans who, against their parents’ wishes, are intent on pursuing careers in the culinary industry. Now living in Los Angeles, they operate Seoul Sausage, which is known for dishing out Korean-style sausages and burgers to California festival-goers. Together, the guys want to make their parents proud and prove to them that they have what it takes to be successful in the wide world of food.

3 Days to Open: Confections of a Rock$tar

Just days before opening, Bobby Flay and his pastry chef, Clarisa Martino, tackled failing ovens, amateur kitchen help and inferior ingredients at New Jersey bakery Confections of a Rock$tar to make sure that Kimmee launched her dream shop on time. So how is Confections doing now that Bobby and Clarisa have left and Kimmee has been running the bakery on her own?

Today, Confections enjoys sales of $400 per day in the middle of the week, $1200 per day on Fridays and Saturdays and $1000 per day on Sundays. The bakery is closed on Mondays and Tuesdays to allow time for individual cake consultations and bakery preparations.

Kimmee’s taken advantage of the techniques Bobby and Clarisa taught her, and says that “Bobby taught me how to do things the right way. Everything he taught me I am utilizing daily.” This includes baking cupcakes with quality ingredients daily and embracing the importance of organization and time management.

For Under the Crust’s Hannah Cohen, the dream of owning her own food truck is one that she first imagined with her late fiancé, Keith, who encouraged her to take her mini-pie business on the road. With the help of her mom, Sheri Cohen, and friend Gary Miller, Hannah hopes to accomplish that goal by taking Under the Crust to the top with her collection of sweet and savory creations. Look out for this pie-loving trio donning T-shirts with their signature saying, “It’s what’s inside that matters.”
