Kitchen Stadium Heats Up With the First-Ever Iron Chef America Tournament of Champions

May Madness hits Food Network this spring as Iron Chefs battle it out — one-on-one — in the first-ever Iron Chef America: Tournament of Champions. With five episodes and a panel of revolving judges, the tournament features high-stakes, bracket-style battles between the best of the best in the culinary world. The tournament begins Sunday, May 5 at 10pm/9c with a face-off between the two newest Iron Chefs, Alex Guarnaschelli and Geoffrey Zakarian.

Secrets to Flourless Cakes, Starches and Desserts for Passover

Flourless Red Velvet CakeIt’s no surprise to see an abundance of flourless chocolate cakes and incredible matzo bark covered in chocolate and butter during Passover — leavened products are forbidden during the holiday, so decadent substitutions are available. In the most-recent issue of Food Network Magazine, the Test Kitchens prepared five cakes without using all-purpose flour (pictured above is Flourless Red Velvet Cake, get more recipes below) to try at home and the results were tremendous. That led us to picking baker and co-owner of Breads Bakery in New York City Uri Scheft’s brain, to dive a little deeper into the subject. The world of starches, flours and desserts is so vast and can be overwhelming — so we turned to an expert.

What would kosher potato starch do to a cake? What type of cakes would you use this substitution in?

Uri Scheft: Potato starch sucks all of the liquid out, but because of the lack of gluten, it doesn’t really bind the ingredients. It leads to a more crumby, more dense cake that hasn’t risen as much. It is good for brownies because they don’t need to rise a lot. Additionally, they are better when not cooked completely through.

Burger Bash 2013 Winners: Bobby Flay and Jeff Mauro

It was a just a matter of time until Michael Symon’s three-time People’s Choice-winning streak was broken. And no one wanted to claim that victory more than Bobby Flay. For years, Rachael Ray has said that Michael has taken the win, but with Bobby just a few short votes shy (sometimes just one or two).

Last year Bobby told FN Dish that he’d rather come in tenth place, than be second to Michael once more. “He only wins because of his laugh,” Bobby jokingly told FN Dish last night. He continued to say that if he didn’t win this year, he might just hang his hat up. No need for that. Even though Bobby was up against 33 other burgers, his Green Chile Burger, crunchified of course, was the ultimate combination of savory, salty and fatty.

What’s the secret to this winning burger? “We let Michael Symon win three years in a row. This year we broke out the roasted poblano chiles. Game over everybody,” proclaimed Bobby.
