NFNS Finalists Speak Up: Teddy

by in View All Posts, May 27th, 2009

11 days remain until the premiere of The Next Food Nextwork Star. Our marketing and PR teams have been sending out all 10 finalists to foodie events and festivals around the country to stir up excitement about the chefs and the show. Here on The FN Dish, we’re giving the finalists their own platform to rant and rave about all the adventures along the road! First up…… finalist, Teddy Folkman:

This last weekend, I headed out to the annual two day event “Brew at the Zoo” at the Maryland Zoo in Baltimore, where I was going to be meeting the guests and talking about being 1 of 10 finalists in the upcoming season of The Next Food Network Star. I’d also be demoing my specialty – Mussels and Fries. I was really excited to be part of this particular event… beer, food, music and later on I’d run into giraffes kissing and polar bears in heat… the typical weekend of a Next Food Network Star finalist – this is so cool.

SPEAK UP:
Are mahi-mahi fish tacos and frickles breaking ball park food tradition or just improving on the classics?

Bobby and Rachael Debate

by in View All Posts, May 20th, 2009

Did anyone catch this mornings Rachael Ray Show? Rachael invited Bobby Flay, Sunny Anderson, Rocco DiSpirito, and Adam Perry Lang to have a round table chat on summer entertaining.

My favorite part was seeing Bobby and Rachael debate over burger patties. Not sure who won the debate, as both Rachael and Bobby stuck to their guns, but I’m curious to hear your guys’ take on the dispute. This is the disagreement:

Bobby Flay puts nothing INSIDE his burger patty. No chopped onions, no garlic, no bell pepper, not even salt and pepper. He liberally puts salt and pepper outside the patty, but nothing inside. (Here are Bobby’s perfect burger rules).

Rachael Ray likes to mix every ingredient combination possible in her burger patties: from worcestershire sauce to fennel seed to chipotles, and of course, salt and pepper.

Bobby’s argument: When Bobby wants a burger, he wants a burger….not meatloaf.

What side are you on?

Paula Deen on Tofu

by in View All Posts, May 15th, 2009

NPR quizzed Paula Deen on tofu a few weeks ago, and if you haven’t heard the segment yet….you should. When the Butter Queen was a guest on NPR’s quiz show, “Wait Wait… Don’t Tell Me!“, she played the “Not My Job” quiz. And if anything is not Paula’s job….it’s tofu.

When you have 11 minutes and 2 seconds to spare, take a listen to the entire interview and quiz here. But if you can’t find the time, here’s a cheat sheet of my favorite moments to fast forward to:

At 1:03 into the segment:
Paula tells us which recipe of hers should have the disclaimer, “Only one serving per lifetime.”

At 3:25 into the segment:
Find out how Paula deep fries an ottoman.

At 6:30 into the segment:
Paula answers three questions about tofu.

The Rule when Visiting a Chef’s House

by in View All Posts, May 12th, 2009

Do not, I repeat, do NOT eat before going to Daisy Martinez‘s home. On Friday we went to Daisy’s house to shoot an upcoming FN Dish video, Meet Daisy, for her new round of Viva Daisy! episodes. Within minutes of arriving to her house, Daisy had food in our bellies, and lots of it!

We literally had just put down our film equipment when she kindly lured us into her kitchen, telling us that she was in the midst of testing recipes for her new cookbook. When we told her that we’d eaten lunch before coming over, Daisy made this adorable face (left) and exclaimed, “Don’t you know you’re not supposed to eat before coming over to my house?” Listen….when a chef says, “try my food and tell me what you think,” I’m always a willing participant! Needless to say, I made room in my stomach.

The hottest ticket in town…

by in View All Posts, May 6th, 2009

So I’m standing about 5 feet away from Mario Batali, both an Iron Chef and one of the most successful restaurateurs in New York City. I go up to him and say, “Excuse me, where did you get that hot dog?”

And do you know what he says? “Over there.” Mind you, this guy can cook dishes like fennel dusted sweetbreads with his eyes closed, and yet there he stood, eating a hot dog like we were at a Mets game.
