Watermelon Gazpacho — Meatless Monday

On a sticky summer day, few things are more refreshing than a snack of cold, juicy watermelon. But when the day turns into evening and the heat just won’t let up, use the sweet melon as the base of a savory chilled soup for dinner. Classic gazpacho is made with a mix of raw veggies such as tomatoes and peppers, but for a fresh new twist, try adding chunks of thirst-quenching watermelon.
This Watermelon Gazpacho recipe from Tyler Florence (pictured above) is not only healthy and cooling, but it’s also simple to make and ready to eat in 15 minutes. Blend juicy seasonal tomatoes, bright watermelon and a serrano chile for a spicy-sweet base before adding onions and cucumbers to the mix. The heat of the chile is a welcome contrast to the cooler ingredients, and topping the dish with fresh dill and crumbled feta elevates the soup's savory flavors.
