Spike It: Strawberry Margarita Ice Pops

I was that kid. You know, THAT kid. The kid who only wanted to eat the "red" popsicles and drink the "red" juice and steal the "red" gummy bears from the bowl. I didn’t want grape — ever. In fact, if we had a box of some sort of treats and the variety included grape, I’d eat all the others and leave the grape in there for someone else.

I didn’t even want the blue raspberry flavor, and that was huge in the '90s. I was all about the red: cherry, strawberry, watermelon.

In my opinion, strawberry was always the best "red." I think cherry was more popular among my group of siblings, neighbors and friends, but I didn’t care about that. Strawberry was the only one I wanted.

This still rings true today. If I were pressed to choose, strawberries would be my favorite fruit, and I’d almost always choose a boozy beverage made with strawberry over, well … anything else. And when it comes to cocktails? Margaritas rank up there as my No. 1.

The strawberry margarita! It’s the dreamiest of all the margaritas.

Pair it with salt and it’s a flavor lover’s craving: It’s super-sweet and salty, and I love that the lime adds a punch of tart and you get a teeny little touch of burn from the tequila.

I’m also a huge tequila lover, which makes these pops a no-brainer. Studded with lime slices and strawberries, they are the most-refreshing thing ever on a hot, sunny day. You know, this is one of those times when being a grownup is really awesome.

Strawberry Margarita Ice Pops

Makes 10 ice pops

Ingredients:

1 cup fresh strawberry puree

1 cup fruit punch

1 cup sugar

1/2 cup fresh lime juice

1/3 cup silver tequila

2 tablespoons Grand Marnier

10 lime slices

Sea salt for sprinkling

Directions:

To make the fresh strawberry puree, puree 1 to 2 cups of strawberries in a blender or food processor with a few tablespoons of water. Pour through a fine-mesh sieve and press with a spoon to release all the juice.

Combine the sugar and 1 cup of strawberry puree in a saucepan over medium heat. Bring to a simmer, whisking so the sugar dissolves. Simmer for 1 to 2 minutes, then turn off the heat. Stir in the fruit punch, lime juice, tequila and Grand Marnier.

Fill each ice-pop mold with a lime slice. Pour the strawberry mixture over top. Freeze according to your ice-pop maker’s directions, for at least 4 to 6 hours. Serve with a sprinkle of sea salt.
