Guy’s Grocery Games-Inspired Cheesy Stuffed Plantains

Inspired by Guy's Grocery Games, here's a recipe that makes use of plantains to create a sweet-and-savory treat.

Contestants were expected to serve up a sweet-and-savory breakfast in Round 1 of this week’s Guy's Grocery Games, and there were some interesting combinations. (Banana split for breakfast, anyone?) But what truly caught our eye was a plantain hash that instantly reminded us of a very real and traditional sweet-and-savory South American dish called Plátanos Asados con Bocadillo y Queso — which is baked plantains stuffed with cheese and guava paste, and it’s delicious.

First, remove the plantain peel: Cut the ends off and then cut through the peel, to the plantain itself, lengthwise, down one side of the plantain, and remove the peel (it will be tougher than peeling a banana, so you can use a small, sharp knife to help). Coat the plantain with olive oil and bake at 400 degrees F until soft and golden, 30 to 40 minutes. Fill the lengthwise cut you made earlier with mozzarella cheese and bake until melted, just a few minutes. Top with pieces of guava paste or small spoonfuls of guava jelly, and sprinkle with some cilantro, lime juice and grated Parmesan cheese.
