A traditional Caesar salad might feature grilled shrimp, but every component in this recipe is made almost entirely on the grill. A homemade Caesar dressing of anchovies, garlic and lemon juice coats romaine lettuce before it’s placed on the grill and cooked until lightly charred. The dressing also coats a baguette, which is placed cut-side down on the grill and then sliced to make breadsticks to serve with the grilled shrimp and romaine.

Shrimp scampi is a perfect option for the grill since it doesn’t require a ton of prep time. Pour a garlic, crushed red pepper, fennel seed and canola oil marinade over jumbo shrimp — you don’t need to let them marinate for very long since it’s so strong; it will adhere to the shrimp while you’re grilling them.

Once they are cooked, melt butter in a large saute pan set over the grates of the grill and add lemon zest, lemon juice, tarragon and thyme leaves to make a sauce for the grilled shrimp.

Skip traditional fried-seafood po’ boys in favor of the Neelys’ grilled-shrimp sandwiches. Marinate skewered shrimp in an olive oil, garlic, lemon juice, smoked paprika, hot sauce, cayenne and Worcestershire sauce mixture for about 20 minutes. After grilling, toss the shrimp in a butter sauce and serve on a grilled baguette with homemade sweet pickle mayo plus shredded lettuce and sliced tomatoes.
