For this week’s Chopped Dinner Challenge, the chefs of Food Network Kitchen chose to feature the basket ingredient squid. While squid is traditionally deep-fried in breadcrumbs to lock in its natural flavor, this stir-fried version makes use of sweet and tangy ingredients like soy sauce, molasses, lime and ginger to bump up the flavor. Served over chilled rice noodles, this take is a refreshing departure from the heavier classic, making it a cooling retreat for summer dining.
First, you’ll want to prepare the squid by cutting the squid bodies on one side so they open up flat, chopping any tentacles in half. Next, cook the noodles in a pot of boiling salted water until tender, about 8 minutes. Drain and run under water until cool.
Heat some oil in a wok over high heat, waiting until it is just about to smoke before you add your ingredients. Then, add the bell peppers, salt and pepper, and cook until the peppers are charred and crisp, about 3 minutes. Add the scallion whites, ginger and garlic until fragrant, about 2 minutes. Finally, put in the squid and sauces, and stir-fry until the squid is just cooked, about 1 minute. Stir in the lime juice and toss the mixture with the noodles, then chill until cool.
