How to Make Perfect Buffalo Wings

Are you the kind of football fan who judges a sports bar by the quality of its Buffalo wings? I'll admit it: Good wings are my prerequisite for a Sunday destination. My all-time favorites can be found at Moriarty’s in Philadelphia, where the colossal wings tossed in a tangy, spicy sauce always score big points. When I moved away from Philly years ago, lack of access to these wings inspired me to try making my own (with mixed results). Fortunately for all of us, Food Network Kitchen came up with a fantastic recipe for super-crispy, fried-then-baked Buffalo wings that will wow your family and friends.

Prepare the Coating

In a large bowl, whisk together the flour, salt and cayenne. Set this aside until you're ready to fry — you'll dredge the wings in batches as you go.

Fry in Batches

In a large heavy-bottomed pot, pour in 2 inches of oil. Place over medium heat and heat until a deep-fry thermometer inserted in the oil registers 375 degrees F. Working in batches, dredge the wings in the flour mixture and fry until lightly browned, about 10 to 12 minutes per batch. Using a slotted spoon, transfer the wings to a paper towel-lined plate. (Make sure the oil returns to the proper temperature before frying each batch.)

In a large bowl, combine the butter, lemon juice and hot sauce. Toss the wings in the hot sauce mixture.

Bake, Then Serve

Transfer the wings, with the sauce, to a large foil-lined baking sheet, or two small ones, and bake, turning the wings occasionally, until they are crispy and have absorbed most of the sauce, about 35 minutes. Transfer the wings to a serving platter and serve with the blue cheese dressing and celery sticks.
