    I'm a stay at home mom. Therefore, I am fortunate enough to have the time to put effort into my daughters lunch. This year I want to start out healthy. I also want to make my little girls lunch something she looks forward to. Which for her means making it fun! Where's the best place to start out with….WEELICIOUS of course! I would love love love to have this cookbook!

    My strategy is to just get my kids to eat their lunch. They don't have much time so the challenge is to not only find something they will eat but something they can eat quickly-that is good for them! Not always easy since they are anti-sandwich!

    I like to have things cut up and in containers or snack bags the night before; Sliced red peppers, grape tomatoes, oranges or tangerines and grapes. I make sandwiches that morning.

    Pack lunch night before. Include 1 fresh fruit or veggie, try to buy organic

    I make lunch the night before I need it — usually it's leftovers from dinner or a sandwich. When I have extra time on the weekends, I like to plan ahead and cook a few lunches for the upcoming week so that I don't have to worry about it. I'm a college student and don't usually get home until 6 or 7 at night, so the less I have to do during the week, the better!
