Roasted Red Pepper Dip for Summer’s Simple Soirées

The beginning of summer means a few things, but maybe the most important is that it’s the beginning of backyard barbecues and potluck parties.

I’m sure quite a few of you are hosting parties this summer and even more of you are planning to attend some fun soirees like graduation parties, birthday parties and classic Sunday suppers. I don’t know about you, but I love showing up to a party with something delicious in hand. And that something delicious has to also be something that can handle a trip in the car to a friend’s house in the summer heat.

One of my go-to potluck style dishes is this Roasted Red Pepper Dip from Ellie Krieger. The original recipe calls for almonds, but I like to give it a nice salty kick and replace the almonds with feta. It gives the dip a smooth and creamy consistency, which makes it perfect for some serious pita chip dipping. Not to mention it’s easy to bring to a friend’s house, and I can promise that your friends will become addicted to this dip as I am — they’ll be begging you for the recipe.

Roasted Red Pepper Dip

1/2 cup crumbled feta cheese
1 cup jarred roasted red peppers, drained
1 clove garlic
1-2 tablespoons olive oil
1 teaspoon red pepper flakes
Salt and pepper to taste

Put the feta into a processor along with the drained roasted red peppers, garlic, olive oil and red pepper flakes. Pulse for 1-2 minutes until the mixture is smooth and then serve immediately with pita chips.

    I wonder why Giada wears so many low cut tops. Her recipes are tasty, the kitchen set lovely, and her face attractive. But between the unnaturally wide, persistent smile and her insistence on wearing tops that emphasize her decolletage, which no other Food TV chef does, I no longer watch her shows, The message she sends is either that she perceives herself as unattractive unless she flaunts her cleavage or that she revels in her sexuality and wants to flaunt it for viewers. The first message is unhealthy for young, female viewers, that their attractiveness requires an overtly sexual component. The second message misapprehends the nature of her cooking show, which is not a "Look at me; I am sexy!" show but a cooking show. Giada is overexposed as it is. I am disappointed that the network executives chose her for the food star series. I have stopped viewing any of her programs.

      Prudish to say the least. I am a healthy male and never really noticed. I actually do watch for the food information as well as the personalities and would rather get this info from a chef who is in shape and attractive as opposed to most who are overweight if not down right fat. Let's get the rest of them to slim down or I won't watch them any more because I will assume their recipes are unhealthy and fattening.
