I make meatloaf with Dill Pickles, Green and Black Olives, Celery, Carrots, Pimentos, mild green chilis, Capers, Chopped Onion, sauteed Mushrooms, Bread Crumbs, Garlic, tsp of Worcestershire Sauce, Salt, Pepper, and a pinch of Chayenne Pepper, 95% lean ground and a Very thick homemade Spagetti Sauce to top with and cook.

A Webber Kettle grill and on my Big Green Egg. To answer your probable question No it doesn’t fall through the grill. Cook at about 280 – 300 degrees to no more than 160 degrees. During the 15 minute rest period the temp will come up to the required 165 degrees. Use your own recipe but just cool it on the grill/smoker.
How do you do indirect on big green egg? Also, are you talking about internal temperature of 160?
tell me how to keep a meat loaf from falling apart. I have tried it all –more eggs, quick oats, rice, breat crumbs, etc. HELP!
I have the same problem. Last night on Worse Cooks in America, one of the two chefs said to use ground chuck or ground sirloin instead of low-fat hamburger. Perhaps you could try that. I also use about a half cup ketchup and 2 eggs in the mixture.

I use a meatloaf mix from the grocer, pork, veal and beef, add breadcrumbs, and spices, eggs and milk and ketchup. Stuff the center with a sharp cheese, kids love it.
