Ground cinnamon and brown sugar give them their classic warm taste while a quick dip in a sweetened apple pie spice mixture guarantees them their famed sugar coating.  Chopped apple chips are baked inside and added on top of the cookies to add a bit of crunch and subtle fruity flavor.
