This afternoon, Alton Brown took to Twitter for a live Q&A session with fans and Food Network. Alton touched on topics from Iron Chef America, to current food trends and this Sunday’s upcoming premiere episode of The Next Iron Chef: Super Chefs — find out what he had to say.

Question: How do you decide what tie to wear on Next Iron Chef?
Alton: I do dress myself and I must confess, I travel with about 30 ties so that I always have choices.

Question: Do you get nervous when you walk into Kitchen Stadium?
Alton: I have butterflies in my stomach every time I walk into kitchen stadium.

Question: If you could challenge one chef to a battle, who would it be and what secret ingredient would you have?
Alton: If I could challenge an Iron Chef, it would be Morimoto: Battle beanie-weenies.

Question: What has been your favorite Iron Chef Battle?
Alton: My favorite Iron Chef battle so far is Battle Yak.

Question: What are you most looking forward to in the upcoming season of The Next Iron Chef: Super-Chefs?
Alton: I’m looking forward to sitting back and watching this season as an audience member. It’s gonna be a bumpy, but tasty ride.

Question: What is your favorite cookbook?
Alton: The 1962 edition of “Joy of Cooking.”

Question: What food trends are you really excited about right now?
Alton: As far as trends go, I’m excited about the increase interest in ancient cuisines, from Rome to Renaissance.

    I had an amazing celery root and carmelized salsify soup this week, but can't find a recipe anywhere. I have never seen this on the food network. Any recipes in the tucked away? Marcia

    Iron Chef is one of my favorites and I love Mr. Brown's commentary as food is being prepared.
    I was a little surprised (perhaps shocked/scared) at the Halloween show where candy was the secret ingredient. The judges are normally very professional, experienced, and knowledgeable about food.
    Kathy Griffin and Kelly Rippa? Really? Please don't force me to depend on Bravo for food experts.
    Hopefully, this was a onetime goof for Halloween.

      While I don't think Kathy and Kelly necessarily qualify as culinary experts, the judge that really griped me is Donatella Arpaia. Whether on Iron Chef or on Chopped, I feel that she has a very witchy bias against female competetors, and alot of that anti-female arrogance was aimed at her co-judges on that episode. Not one that best outings, although I was happy that Chef Wong came out on top in spite of Donatella.

    so, Mr Brown. you dress yourself. well, i must say that i'm disappointed in your choice of the scarf you wore during the first episode of the Next Iron Chef. why in the world would you choose to wear something that our enemies wear? terrorists who would like nothing better than to destroy us and our way of life. nothing says fashion statement like a terrorist organization <sarcasm>.
