    Like probably everyone else the bragging was ma's fried chicken was the best. And I tried to recreate it.

    Two of the important things for grdat fried chicken are Crisco shortening and a large cast iron pan.

    Seasoning and breading aside anyone who implements those two items will have great fried chicken no matter what else gets done to the chicken

Here is how we have started frying chicken so that we utilize the whole chicken…We take the bones out of the legs, thighs and breast and beat them flat and cut them up the size of chicken fingers. Then season and dip them along with the wings in buttermilk. Bread them with flour seasoned with Season-All or Cajun seasoning…The rest of the chicken goes in the pot along with the bones for stock for Chicken and Dumplings.

    I put my chicken pieces in buttermilk for at least an hour or more, drain and dredge the chicken in seasoned flour and fry in very hot oil! The best fried chicken ever! when I do wings I do the same but after I let them rest on paper towels I place them in a bowl and drizzle with honey and sprinkle with chopped green onion, my family loves them!

  4. We did a fried chicken demo at World Spice Merchants a couple of weeks ago. http://www.facebook.com/media/set/?set=a.23471033… We soaked the fried chicken in buttermilk overnight, then dredged them in a flour/cornmeal mixture…with spices, of course! Nothing beats fried chicken.
