Summer Food Safety: Mayonnaise

During the latest “Ask the Editor” chat on Food Network’s Facebook page, many readers inquired about mayonnaise in salads and how long they can be left out during summer months. With Fourth of July celebrations upon us, it’s important to practice food safety –you don’t want your guests missing the fireworks because they’re not feeling well. Even if you place Grandma’s famous potato salad in the shade, it has a timely expiration.

So how long is too long?

The FDA says, “Stick to the ‘two-hour rule’ for leaving items needing refrigeration out at room temperature. Never allow meat, poultry, seafood, eggs, or produce or other foods that require refrigeration to sit at room temperature for more than two hours.”

The outside temperature also makes a difference. The FDA adds, “If the air temperature is above 90 degrees F, the ‘two-hour rule’ becomes ‘one-hour.’”

Finally, if you’re entertaining, make sure you have additional coolers with ice available. If you crowd the refrigerator or freezer with food, the air won’t circulate and your food won’t be cooled to the proper temperatures.

    After watching the food star competition tonight I have come to the conclusion that they have to keep Penny on and then BOOM drop her. NO ONE in the world would WATCH her show. She must go. I once loved the food star show but now some of the things they must do and to continue with someone with an attitude like that is becoming pitiful. A beautiful person makes a beautiful show and thats not Penny

    The food star show is long and drawn out. They bring in all the great "judges".
    I agree about Penny NO-ONE would ever watch her show. I don't know why they bother though they
    rarely put the new ones on. all they play is re-runs. They will play the same show several times a week. Pretty pitiful. Food TV use to be my first choice on TV now it is last, I hardly watch it any more.

    I would NEVER ever watch a show starring Penny. Her presence on The Food Network Star is making me want to stop watching that as well. She is a horrid person and I dont care how well she cooks. Her personality is awful and her irrational and inflated ego was too much to take 5 mins into the 1st show. Honestly if she sticks around much longer Im going to have to stop watching, shes ruining it for me :(
