Recipe of the Day: Chicken Fingers With Curried Ketchup by in Recipes, May 23rd, 2011

chicken fingers with curried ketchup

Let’s face it: Everyone loves chicken fingers — both kids and adults. So why not eat chicken fingers you can feel good about? Ditch the ones available in the frozen aisle and roll skinless chicken breasts in crunchy panko breadcrumbs, then bake them off until crisp and cooked through. Add lime juice and curry powder to ketchup for an upgraded dipping sauce.

Great recipe! I have a question about another chicken dish though.
When cooking chicken parmesan, I struggle to keep the crust on the chicken. It always seems to fall off. I follow the recipe: dredge in flour, egg, and then breadcrumbs, but after coming out of the oil, the crust separates from the chicken and falls off.
    Any suggestions? Thanks!
