    I make pumpkin soup but use stainless steel pots. First I start with frying a diced onion then add the flour and spices. I then add the milk to make a rue. In a separate pot I cook the pumpkin till tender then add to the rue and blitz with a slender blender. I have found on some occasions the soup tastes metallic or acidic but I dont know why. Would be grateful for your comments.

    Big Question for next weekend. I am making New Year Eve's dinner for family flying in from Hong Cong. Shrimp Cocktail, Arugala salad with sliced pears, gorgonzola, glazed pecans with a light pear vineagrette.Standing rib roast with a horseradish sauce accompanied by 5 cheese with panchetta macaroni and cheese and baby carrots and asparagus. and for dessert a chocolate mousse with a white chocolate cup with raspberry sauce and creme anglise. My concern is with the dessert can I do the mousse in advance (the day before) and freeze it overnight and assemble the dish later the day of service. Also, is the horseradish sauce acidic enough to cut the richness of the beef?
